Ingredients
- 4 Tbsp Mayonnaise
- 5 Eggs (Large)
- 2 Green Onion
Prepare Beforehand
Chop the green onion in to bit size pieces. This will be used as garnish later.
Have a ice bath bowl ready for the eggs.
Recipe
Boil water in a pot on stove over high. Once bubbling toss in those eggs. Boil eggs for about 11-12 minutes.
TIP: If unsure they are done, take them out and try to spin them on their bottom. If they don’t spin well they are not done. If it spins like a top very consistently it is then done.
Quickly take those eggs and plunge them in to the ice bath. This step is not necessary but makes it easier to peel.
Another way to de shell the eggs it to poke a finger sized hole in the top and gentle soften the bottom. You can then blow the whole egg out from the top with pressure.
Once de shelled we then cut the eggs carefully in half. Make sure to be precise here and preserve the middle yolk as much as possible. Set the white eggs aside and toss the yolks in a bowl along with the mayo and a dash of paprika.
Wisk all together until it is all combined nicely. We are looking for a smooth consistency. When finished fill the hallowed out white eggs with the filling. Garnish with smoked paprika and green onions.
