Ingredients

    •  2 Tbsp Butter
    • 1 Cup Veggies (any veggies work but I recommend bell peppers and tomato)
    • 4 Large Eggs
    • 3 Large Egg Whites
    • 5 Tbsp Dairy Free Sour Cream

Prepare Beforehand

The prep is just as simple as dicing up all the veggies. Also crack all the eggs beforehand in a bowl and wisk together the egg and egg whites.

 

 

 

Recipe

Place a pan on medium heat and melt the butter. Then toss in the veggies after four minutes. Leave this until veggies become soft.

While those are cooking take the bowl of eggs we set aside and add the sour cream then mix. Then we toss that into the pan with the soft veggies.

Cook this about two minutes until the eggs start to form. Then we can add our seasonings. Im sticking to the basics here and doing salt and pepper and maybe even some mustard.

Stir constantly. We do NOT want the eggs to brown at the bottom. We want them scrambled. After the eggs finalize we can take the heat off and enjoy with a garnish of parsley.
