Ingredients
- 1 Pack Roma Tomato
- 2 Bell Peppers (any color)
- 5 Boneless Skinless Chicken Breasts
- Lemon Juice
- 6-8 Skewers (Steel or wood doesn’t matter)
Prepare Beforehand
Very easy prep for this recipe. Well just have to cube up the chicken breasts. The Bell peppers just need to be hallowed out and cut into strips then small squares. As for the tomatoes we can cube them as well. We want the veggies on the skewers so cut carefully.
As a side note this is not mandatory but refrigerating the chicken for two hours with the seasonings as it all marinates together will definitely change the flavor!
Recipe
First we can start with the chicken. I Put all the chicken in a Large mixing bowl and toss in the following ingredients: 4 Tbsp Lemon Juice, 2 Tbsp Minced Garlic, 1 tsp salt, 1 tsp pepper, 4 Tbsp Oil, 1 Tsp Oregano, tomatoes and bells. As said above its appreciated to refrigerate this but its okay if it isn’t.
Moving on we transfer everything from the mixing bowl to the skewers.
If you find yourself not having enough skewers you can leave the chicken on the skewers and put the veggies beside it in another pan. Not a big deal.
Next we heat a medium hot pan with a couple swigs of oil. Throw the skewers on there and start cooking!
This realistically should take 5-6 minutes but just use a temp to see when they are done. When on the pan we are looking for a nice crispy outside with juicy inside. To accomplish this I like a higher heat to crisp it in the first half and then I lower the heat and steam it with a cover for the last half. Cook your chicken as you see fit though.
TIP: Cooked chicken is 165 F
I love to garnish this recipe with parsley and pepper and maybe even a dash of oil.
