Ingredients
- 6 Russet Potatoes (Less if you don’t eat a lot)
- Oil
- Rosemary
Prepare Beforehand
Just peel the Potatoes. Simple!
Recipe
First cut the potatoes in half horizontally. Then cut eat half into 3-4 pieces. We want them all relatively the same size or they will all cook unevenly.
Before tossing them into the oven we need to boil them. Heat a pot of water on high heat with salt.
Leave in the water and check on them after 12 minutes. They are done when they turn fork tender.
Strain the water and preheat the oven to 350 degrees. On a baking sheet drizzle some oil over a piece of foil or parchment.
Put the baking sheet in the oven with the oil for 3 minutes. Take it out and the oil should be sizzling.
Now we can put the potatoes on the hot oil and season them with salt and pepper. Flip them with a spatula and be carful. Everything is hot.
Put back in the oven and leave it for two hours. Each 30 minutes we flip them getting each side crispy. Drizzle more oil as needed. We don’t want them drying out.
Finally pull them out and place into a large bowl. In another bowl crush rosemary with the oil and pour over the potatoes.
Let cool and enjoy!
