Ingredients

    • 12 Red Potatoes
    • 1/2 White Onion
    • 4 Eggs
    • 1 Cup Flour
    • 1 carrot
    • 2 tsps Minced Garlic
    • 1 Small Wedge of Ginger
    • 1 Zucchini
    • 3 Sweet Potatoes
    • Seasonings

Prepare Beforehand

First we want to grate the potatoes, zucchini, onion, sweet potato, carrot and garlic (if not minced).

This is it for the prep. It’s mainly a lot of work to grate these items.

 

 

Recipe

The secret to these patties are crispy outside and a soft pillow inside. To get this result not only do we bake the patties, but also pan sear them in hot oil to get that crunch we are looking for.

Once all the ingredients are grated place them in a strainer and squeeze the life out of them. We want no juice in those veggies at all. Place grated veggies in a large bowl with the eggs, oregano and 3/4 of the flour. Mix until thoroughly combined.

 

Next shape that mixture into patties. This make about 5-6 patties depending on size. Get one last coat in some more flour.

Before we sear the patties preheat the oven to 425 degrees. Place parchment paper on a baking sheet with a drizzle of oil. Place in oven to get that oil a little warm. So about 3-5 minutes.

Heat a pan medium high heat with oil. Pan Sear those patties and flip halfway. This shouldn’t take long. We just need that brown crispy outside we talked about earlier. I recommend cooking these one at a time obviously.

 

Please don’t forget about that hot cooking sheet on the oven with oil.

Next Take those patties and slap them on the hot oil baking sheet. Leave them in the oven for 15-20 minutes. Let cool and enjoy.
