Ingredients

    • 5 Tbsp Butter
    • 2 Cloves Minced Garlic
    • 5 Tbsp Wine (Any white Wine)
    • 4 Tbsp Chicken Stock
    • 1.5 Pounds Shrimp (Raw)
    • 5 Zucchinis
    • 3 Roma Tomatoes

Prepare Beforehand

Id say the hardest thing about this recipe is the prep. Spiraling the zucchini can be such a challenge sometimes. I recommend getting a zucchini spiral machine for this specifically. Of course we don’t need that. I do the time consuming knife work.

I start by using a veggie peeler to get the zucchini into thin layers. Make sure to cut horizontally please. After I just use a knife to cut long strips of noodle shapes so it mimics the consistency.

Hold on because we arn’t done there. We are also cutting the roma tomatoes into slices as well.

Last but not least the shrimp. Peel the shrimp and cut of the end if you don’t want to deal with it while you eat.

Recipe

First we need melt butter and a dash of oil on a medium heat pan. Add the shrimp and flip after 5 minute or until they brown and soft. We can lower the heat to a low-medium and add our garlic, wine and stock. Stir all together then add the seasonings pepper, salt.

After the shrimp is cooked we can set that aside. Lets now start on the tomatoes.

I personally like to oven roast tomatoes which includes sliding them in the oven with a drizzle of oil and a dash of salt but for this recipe we will pan cook them.

Add the tomatoes to the pan with some oil. Heat should be a little higher than medium for this. The goal for the tomatoes is for them to be soft with a little color.

Add in the zucchini and a dash of salt and stir. After two minutes we can add back the shrimp mixture to that same pan. This meal should be completed after 3 minutes of a medium heat just to have everything around the same temp again.

For the cherry on top we will garnish this masterpiece with some parsley.
