Hey there, mac and cheese lovers! Get ready to dive into a bowl of ooey-gooey cheesy heaven with my Mac and Cheese Handy Helper recipe. It’s quick, it’s easy, and it’s the ultimate comfort food that’ll leave you wanting seconds on a lazy sunday!


Ingredients

    • 1-2 cups Banza elbow macaroni (or you’re favorite pasta shape)
    • 1 cups shredded mozzarella cheese (as always fresh shredding cheese is BETTER)
    • 1 cup almond milk (or preferred milk)
    • 2 tablespoons butter
    • 1/4 cup all-purpose flour
    • Seasonings includes ~2 Tsp of each: paprika, pepper cayenne pepper on garlic powder
    • Optional Toppings: Crumbled bacon, sliced green onions, or breadcrumbs for a crunchy twist (totally up to you, but trust me, it’s worth it!)
    • 1.5 lbs ground beef or turkey
    • 25 oz. Good Culture cottage cheese
 

Prepare Beforehand

We are making the creamy cheese sauce first. The cottage cheese needs to be blended. This the key ingredient that will pull the entire dish together. Blend the cottage cheese with the spices and the mozzarella cheese. With 25 oz. of the cottage cheese you might have to do it batches if you don’t have a big blender.

We are also going to boil HEAVILY salted water on the stovetop for the pasta. Here is also a good time to prep the toppings of your choice! Get creative with it.

 

Recipe

Boil the pasta on in the salted water for about 10-13 minutes. Make sure to stir occasionally as the pasta will stick to the bottom.

TIP: If it starts to boil over then turn down the heat a little bit and even put a single ice cube inside. This will help with the bubbly top layer.

Drain pasta when done and set aside .5 cup of the saved pasta water.

After that we are to start the meat. Cook over stovetop in a pan with a thin layer of oil on medium to high heat and sear the meat for 2-3 minutes, or until cooked. We want a nice browning on the meat so we don’t want to break apart the meat instantly. We also don’t want to salt it immediately as the salt will draw out the water resulting in less browning. After it is starting to look cooked evenly then we can start breaking the meat apart into bite size.

Next we are to start to putting the stuff together. Have a thin layer of oil in a pan on medium heat. Throw in the macaroni, .5 cup of salt water, cottage cheese mixture, and the meat.

Mix well and let everything combine together. Stir often as it is ALIVE and want everything to be mixed.

About 5-10 minutes when can turn of the heat and throw on the toppings.
