Ingredients

    • Olive Oil
    • 1.5 Cups Onion
    • 2 tsp Fresh Mined Garlic
    • 1 Cup Plant Based Heavy Cream or Coconut Milk
    • 2 Cups Chicken Stock
    • 1 tsp Tomato Paste
    • .5 Cup Fresh Basil (7 ish leaves)
    • 8 Roma Tomatoes
    • Seasonings as follows

Prepare Beforehand

Pre-heat the oven to 400 degrees. First we want to get veggies setup. Cube the onion and get the minced garlic ready. We pre heat the oven to conserve time because chopping veggies doesn’t take long.


Recipe

Rinse tomatoes, slit an ‘X’ shape on the bottom with a knife then cut the stem part off as well. Place tomatoes on a baking sheet and drizzle olive oil, salt and pepper. Let that sit for 45 minutes until soft.

After they are done take the tomatoes out of the oven and peel them. You can then throw them in a blender. Blend it up then add the following inside blender: milk/cream, minced garlic, onion and basil leaves.

After blending it a second time we want to transfer it to a pot. Add the chicken stock, salt and pepper. Let this simmer on the stove for about 10-15 minutes.


What can I garnish on my Tomato Soup?

It is popular to top it off shredded parmesan or more pepper. If you’re looking for more veggies you are welcome to put more veggies on top. Cubed tomato or squash works, but if you’re an onion lover like me then diced yellow onion is the way to go!


What can I serve my Tomato Basil Soup With?

Ahh the classic crispy GRILLED CHEESE!! Its a great crunchy balance for a creamy soup; this is personally my favorite side dish. Coming in a close second is a delicious quesadilla. You may be thinking these side dishes are not keto friendly. As long as you pick the right brand for bread and tortillas it can be close to 5-10g of carbs which is keto friendly to me.
