Butternut Chicken Squash

Ingredients

    • 1 Butternut Squash (enough for 12oz or 3 Cups)
    • 2 Cups Brussel Sprouts
    • 5-7 Slices of Bacon
    • Yellow Onion
    • 5 cups Chicken Breast
    • Minced Garlic (Fresh is Better, like 3 cloves)
    • Seasonings as follow
    • 1 Tablespoon Apple Cider Vinegar

Prepare Beforehand

Just a Regular Prep Guide. Cube the Squash until you have 3 cups. Slice Brussel sprouts in half and finally thinly slice 1 cup onion. Cut your chicken into cube pieces.

 

 

 

Recipe

Place the Brussel sprouts, squash and onion on a baking sheet with a dash of oil and salt. Set oven to 400 and place veggies inside. Check on the Veggies until soft, this can take up to like 20 or so minutes. 

You can definitely microwave the veggies as this is a faster and lazy way but I strongly dislike the microwave. This method involves Microwaving all veggies with plastic wrap over a bowl for 2-3 minutes.

While that is in the oven we want to cook our chicken. Start by heating a pan on stovetop to medium heat. Place a slab of butter or oil. Place chicken and cover. We are both searing and steaming the chicken so that it can be done at a reasonable time. Season with salt, pepper, onion powder and garlic powder. This should take about 7-10 minutes, or until full cooked.

Cook bacon as normal. Place bacon on a hot pan over stovetop set to medium heat. Trick here is to add water for soft bacon OR cook it dry and longer for crispy.

After everything is cooked, combine all and let cool.

 

 

What about Veggies Substitution?

This dish is very sweet from the butternut squash and smoky from the bacon. Such a great combination! You are welcome to change the veggies in this recipe, try to keep the chicken for the protein and the squash for sweetness. Easy substitutes for bacon are mushrooms or onions. I know brussel sprouts are a big no to a lot of people so I recommend are kale, broccoli and cauliflower. Have fun with the recipe and make it yours!
